½ cup juice from Margarita Spiked Pineapple (below)
½ cup pineapple juice
½ cup club soda
¼ cup Tequila
1 lime
Margarita spiked pineapple chunk (below)
Instructions
Combine the two juices, club soda, Tequila and lime juice in a pitcher and refrigerate for a couple of hours. Serve in a margarita glass rimmed with coarse sea salt and lime zest. Garnish with a piece of Margarita Spiked Pineapple.
Margarita Spiked Pineapple
½ packet Frozen Margarita Slush Mix (Retired)
1 cup pineapple juice
½ cup Tequila
½ fresh pineapple, cut into chunks
In a small saucepan, add slush mix and pineapple juice and bring to a boil until the mix dissolves. Remove from heat and let sit for 10 minutes. Slice pineapple into bite-size chunks and pack it into mason jars. Once the mixture is slightly cooled, add Tequila; pour over pineapple in mason jars and add lids. Refrigerate.
